If we're updating our standard menu this winter, we absolutely need to update our vegan offerings as well. Both pieces are made with dark chocolate (absent any milk powder), oat milk, and agave syrup. In the interest of full disclosure though, our kitchen does routinely handle dairy, and honey in our other products.
First up is a Maple-Sunflower vegan truffle. We toast and salt hulled sunflower seeds before covering them in fresh made caramel. This is then ground and blended into a dark chocolate sunflower gianduja ('John-do-ya') layer, over a dark chocolate maple syrup ganache. Next to this is our Ginger-Lime vegan truffle. Freshly grated ginger peel is steeped in oatmilk with agave syrup before blended into a dark chocolate key lime ganache.
